Canadian Red Eye

Ingredients

  • 1 slice white or whole-wheat bread, toasted
  • 1 tsp butter, softened 5 mL
  • 2 slices Sensations by Compliments Thick Centre-Cut Smoked
    Applewood Bacon, cooked, each cut into quarters
  • 2 hard-cooked eggs, each cut into 4 wedges
  • 4 cherry tomatoes
  • 1 leaf Romaine lettuce, torn into bite-size pieces
  • pinch each salt and pepper
  • 2 bottles lager-style beer, chilled 330 mL each
  • 1/2 cup vodka, chilled 125 mL
  • 3 cups homemade Clam & Tomato Juice Mixer or Compliments
    Tomato Clam Cocktail, chilled
    750 mL
  • 4 wooden skewers (6 in./15 cm), soaked

Directions

  • Step 1

    Trim crusts off toast and discard. Spread toast with butter; cut into 8 triangles. Thread toast points, bacon, egg wedges, cherry tomatoes and lettuce onto the 4 skewers. Season egg with salt and pepper.

  • Step 2

    Divide beer and vodka into 4 tall chilled glasses. Top with clam & tomato juice mixer. Garnish drinks with skewers. Serve immediately.

Tip

To hard boil eggs; place raw eggs in a small saucepan and cover with 1 in. (2.5 cm) cold water. Bring to a boil over medium-high heat. Cover and remove from heat. Let eggs stand in water for 8 to 10 min. Drain, cool in ice water and peel.
