Ingredients

1
large Italian loaf (oval-shaped)
1/2 cup
olive oil
125 mL
3 cloves
garlic, minced
1/2 tsp
salt
2 mL
1/4 tsp
pepper
1 mL
2 cups
Canada 150 PEI Aged 2 years Cheddar, shredded
500 mL

Directions

Step 1

Without cutting all the way through, cut twelve 1-in. (2.5-cm) thick slices into loaf. In small bowl, stir together oil, garlic, salt and pepper. Brush mixture between and onto the bread slices, including top of loaf. Stuff cheese between slices. Wrap loaf loosely in foil. Place on grill preheated to medium-high.

Step 2

Close lid and cook 6 to 7 min. until cheese starts to melt. Open foil to reveal top of loaf and move to indirect heat and cook 5 to 7 min. longer, until bread is lightly toasted and cheese is golden. Cool slightly; pull slices apart to serve.

Tip

Add 1 tbsp (15 mL) finely chopped parsley, chives or basil to garlic oil.
Stuff with chopped sundried tomatoes and cooked bacon to make a heartier appetizer.
