Bring large pot of salted water to a boil. Add 1/2 pkg Sensations by Compliments Egg Noodles; cook 4 min. Add 2 cups (500 mL) small broccoli florets; cook about another 2 min. until noddles are tender. Drain. Toss with 1/2 bottle VH Curry Sauce (any flavour), 2 tsp (10 mL) soy sauce, drizzle vegetable oil. Plate. Sprinkle with julienned carrots, sliced fresh chilis and green onion, bean sprouts, cilantro and toasted cashew pieces. Makes 6 cups (1.5 L)
In a large bowl, add beans, tuna, artichokes, red onion and capers and stir to break up tuna.
In a small bowl, whisk together oil, 2 tbsp (30 mL) lemon juice, Italian seasoning and salt. Pour over tuna mixture. Add spinach and gently stir to combine. Add more lemon juice, if desired.
Capers give a slight mustardy and peppery flavour.
When making soups and are short on small pasta to add in, use this trick to turn spaghetti or fettuccini bite-sized. Wrap long pasta tightly in tea towel. Hold towel ends closed. Press down and slide bundle from end-to-end against edge of counter. Pasta’s ready for the pot!
