- all-purpose flour
- 500 mL
- 3/4 cup
- coarsely grated Panache Applewood Smoked Cheddar Cheese Aged 2 Years, divided
- 175 mL
Directions
Step 1
Bring all ingredients to room temperature before starting. Preheat oven to 230°C (450°F). Spoon 1 tsp (5 mL) canola oil into each of 12 cups in popover pan(s). Preheat the pan(s) in the oven while making the batter.
Step 2
In a spouted bowl, whisk together the eggs, milk, melted butter, thyme, rosemary, sugar, salt and pepper. Add the flour in batches, mixing just until smooth.
Step 3
Carefully remove the popover pan(s) from the oven, being mindful of the hot oil (keep oven on). Pour batter to fill each cup about 2/3 full, then top with 1 tbsp (15 mL) of grated cheese.
Step 4
Return pan(s) to oven. Bake 15 min. until popovers are puffed up, then reduce the oven temp to 180°C (350°F) and bake another 15 min., until golden brown and crisp. (Tip: As tempting as it is, don’t open the oven door while popovers are baking!) Remove from oven; carefully lift out popovers from pan(s). Serve immediately while hot and puffed.
