Zesty Shrimp Flatbread

Ingredients

  • 3/4 bag frozen Cooked Pacific White Shrimp (71-90 ct), thawed and tails removed 341 g
  • 1 lime, zested and juiced
  • 1/4 cup finely chopped red onion 60 mL
  • 3 tbsp chopped fresh mint 45 mL
  • 2 tbsp seeded and minced jalapeño pepper 30 mL
  • 1 small plum tomato, diced
  • 1/8 tsp salt 0.5 mL
  • 1 pkg Original Flatbread 275 g
  • 1/2 cup Tzatziki Yogourt & Cucumber Dip 125 mL
  • 1 cup shredded lettuce 250 mL

Directions

  • Step 1

    Place shrimp in a bowl, sprinkle lime zest and 4 tsp (20 mL) lime juice overtop. Stir in onion, mint, jalapeño, tomato and salt.

  • Step 2

    Spread tzatziki on flatbread, sprinkle with lettuce and scatter shrimp mixture overtop.

Tip

You can also serve the shrimp mixture and tzatziki in pita shells and ciabatta buns or on a thin crust pizza base.
