Bean & Corn Taco Salad

Ingredients

  • 1 can black beans, rinsed and drained 540 mL
  • 3 tomatoes, diced
  • 1 avocado, peeled, pitted, diced
  • 1 cup frozen peaches and cream corn, thawed 250 mL
  • 1/4 cup finely chopped cilantro 60 mL
  • 2 tbsp lime juice 30 mL
  • 1/2 tsp salt 2 mL
  • 1/4 bag white corn tortilla chips 75 g

Directions

  • Step 1

    In a large bowl, add black beans, tomatoes, avocado, corn, cilantro, lime juice and salt.

  • Step 2

    Lightly crush tortilla chips into bite-sized pieces, add to bean mixture and mix gently. Serve immediately.
