Directions
Step 1
Popsicles
In a small pot, bring all of the ingredients except for the iced tea to a boil. Simmer over medium heat for 4 minutes or until the raspberries have completely broken down.
Step 2
Strain the raspberry mixture through a sieve placed over a large measuring cup with a spout, pressing on the raspberries with the back of a ladle to extract as much syrup as possible. Compost the residue. Add the iced tea to the measuring cup and mix well.
Step 3
Fruit
Divide the fruit among the cavities of a popsicle mould. Fill the cavities with the iced tea mixture and insert a popsicle stick into the centre of each one.
Step 4
Freeze for 6 hours or until the popsicles are firm. To unmould, run the bottom of the popsicle mould under warm water.
