In separate bowls, soak dates and cashews at least 2 hr. and up to overnight.
Reserving soaking liquids, drain dates and cashews. Place dates, cashews, coconut milk and vanilla into blender or food processor; puree until smooth. Thin with 1 to 2 tbsp (15 to 30 mL) reserved soaking liquids, if needed, for dipping sauce texture.
Serve with fruit such as strawberries, pineapple, cantaloupe, banana or kiwi.
Eat leftover sauce with yogurt or add into smoothies.
