Po’ Boy-Style Cod Sandwich

Ingredients

  • 1 pkg Compliments Balance Wild Cod Fillets, thawed, patted dry,
    each fillet cut into 4 pieces
    400 g
  • 1 1/2 tsp Cajun seasoning 7 mL
  • 1 tbsp olive oil 15 mL
  • 4 slices Artisan Organic Sourdough Boule, halved
  • lettuce leaves
  • 1 large tomato, thinly sliced
  • 1/4 English cucumber, thinly sliced
  • CAPER-LEMON SAUCE:
  • 1/4 cup low-fat mayonnaise 60 mL
  • 1/2 tsp finely grated lemon zest 2 mL
  • 2 tbsp lemon juice 30 mL
  • 1 tbsp capers, drained 15 mL

Directions

  • Step 1

    Season cod all over with Cajun seasoning. Heat oil in large non-stick skillet set over medium heat. Cook cod for 3 to 5 min per side or until fish flakes and cooked through.

  • Step 2

    Caper-Lemon Sauce: Whisk mayonnaise with lemon zest, lemon juice and capers until combined.

  • Step 3

    Layer evenly onto half the bread slices, Caper-Lemon Sauce, lettuce, tomato, cucumber and cod. Top with remaining bread.
