Smoky Pineapple Chutney

Ingredients

  • 1 tbsp olive oil 15 mL
  • 1 pineapple, peeled, cored and finely diced
  • 1 red onion, finely diced
  • 1 tsp smoked paprika 5 mL
  • 1 tsp salt 5 mL
  • ¼ cup cider vinegar 60 mL
  • ¼ cup Sensations by Compliments Spirited Mickie Craft Beer Chipotle BBQ sauce 60 mL
  • ½ cup coarsely chopped fresh cilantro 125 mL

Directions

  • Step 1

    Heat oil in large saucepan over medium heat. Add pineapple, onion, paprika and salt. Cook 3 to 4 min., until pineapple and onion are starting to soften and paprika is fragrant.

  • Step 2

    Stir in vinegar and barbecue sauce. Reduce heat to low and simmer, stirring often, 10 to 15 min., until sauce has thickened and reduced. Remove from heat and stir in cilantro.

Tip

Substitute red wine vinegar for cider vinegar.
