Zesty Greens Pizza Topper

Ingredients

  • 3 tbsp olive oil 45 mL
  • 1 tbsp anchovy paste 15 mL
  • 1 clove garlic, minced
  • 1/2 tsp lemon zest 2 mL
  • 2 tbsp lemon juice 30 mL
  • 1/4 tsp salt 1 mL
  • 1 green onion, finely sliced
  • 2 tbsp chopped capers 30 mL
  • 2 tbsp chopped toasted pumpkin seeds 30 mL
  • 1 pkg mixed greens such as baby spinach and
    baby kale (about 4 cups/1 L)

Directions

  • Step 1

    In large bowl, mix together oil, anchovy paste, garlic, lemon zest, lemon juice and salt. Stir in green onion, capers and pumpkin seeds. Add mixed greens; toss to coat. Serve as a topper on your
    favourite pizza.

Tip

Omit anchovy paste and substitute with olive tapenade.

Serve on top of sandwiches, pasta or burgers.
