Directions
Step 1
Preheat a clean, oiled grill to medium-high.
Step 2
To prepare tzatziki, coarsely grate cucumber then toss with salt in a medium bowl to combine. Let stand until additional liquid draws out, 10 min.
Step 3
Carefully pour off excess liquid from cucumbers, if needed, then scrape into a clean kitchen towel. Wring out to remove as much liquid as possible. Transfer to a clean medium bowl, then stir in yogurt, dill and garlic to combine. Cover with plastic wrap and refrigerate.
Step 4
To prepare tacos, grill burger patties from frozen, with the lid closed, 5 to 7 min per side or until burgers reach an internal temperature of 160°F (71°C). Set aside.
Step 5
Smear each tortilla with tzatziki. Slice each burger in half, then place two halves in the centre of each. Top with feta cheese, cucumber, onion, tomatoes and olives. Garnish with mint. Fold over to serve with lemon wedges.
