Directions
Step 1
Lay out the squares of aluminum foil on a clean surface and set a square of parchment paper in the center of each, set aside.
Step 2
Cut the cobs of corn into quarters and then split each in half down the center vertically. Divide the corn evenly between the foil packets placing it in the center of each square.
Step 3
Divide the halved potatoes, diced red pepper, diced red onion, sliced sausages and shrimp evenly between the foil packets. Top each with 1 tbsp garlic butter, then season each packet with ½ tsp of old bay seasoning, along with a pinch each of salt and pepper.
Step 4
To form the packets, bring together the short edges of the foil, crimping around all the edges to seal them tightly. Cook the packets on the grill over your campfire or bbq, until puffed and cooked through, about 30-35 mins.
Step 5
Remove the shrimp boil packets from the heat and let cool slightly. Gently open the foil packets, dress with a squeeze of lemon and garnish with chopped parsley.
