Chicken with Crunchy Salsa Topping

Ingredients

  • 1/2 cup panko breadcrumbs 125 mL
  • 1/3 cup medium chunky salsa 75 mL
  • 1/4 cup finely grated Asiago or Parmesan cheese 60 mL
  • 3 tbsp finely chopped fresh chives 45 mL
  • 2 tbsp finely chopped fresh parsley 30 mL
  • 1 tbsp olive oil 15 mL
  • 1/4 tsp pepper 1 mL
  • 4 boneless skinless chicken breasts 0

Directions

  • Step 1

    Preheat oven to 375°F (190°C). In a bowl, mix together breadcrumbs, salsa, cheese, herbs, oil and pepper.

  • Step 2

    Lightly pat breadcrumb mixture onto chicken and bake on a parchment paper-lined baking sheet until chicken is cooked through, about 20 to 25 min.
