Grilled Lobster With Caper Gremolata

Ingredients

  • 2 lemons, zested and juiced
  • 2 tbsp thinly sliced fresh Compliments Chives 30 mL
  • 3 tbsp chopped fresh flat-leaf parsley 45 mL
  • 2 tbsp capers, drained 30 mL
  • 8 fresh lobsters, steamed and split in half (1 to 1 1/4 lb/500 to 625 g each)
  • 1/3 cup unsalted butter, melted 75 mL

Directions

  • Step 1

    Preheat grill to high. Meanwhile, combine 1 tsp (5 mL) lemon zest (save the rest for a later use), chives, parsley and capers and chop finely. Set aside.

  • Step 2

    Grill lobster halves, flesh side down, for 3 to 5 min. or until just marked. Divide lobster among 8 plates, crack claws and squeeze with lemon juice. Sprinkle with gremolata and drizzle 2 tsp (10 mL) of butter over each. Serve immediately.
