Planked Meatloaf & Steamed Kale Salad

Ingredients

  • 1 lb lean ground beef 500 g
  • ¾ cup breadcrumbs 175 mL
  • ½ cup Sensations by Compliments Spirited Mickie Sweet & Tangy
    Bourbon BBQ Sauce, divided
    125 mL
  • 1 egg, lightly beaten
  • 3 cups baby kale 750 mL
  • 2 tbsp olive oil 30 mL
  • 1 tbsp white wine vinegar 15 mL
  • ¼ tsp salt 1 mL
  • 4 corn cobs, cooked, kernels removed
  • ¼ pkg Sensations by Compliments Goat Brie Cheese, cut into eight chunks 50 g
  • 1 grilling plank, soaked

Directions

  • Step 1

    In large bowl, mix together ground beef, breadcrumbs, ¼ cup (60 mL) barbecue sauce and egg. Shape into loaf and place on soaked plank.

  • Step 2

    Place planked meat loaf on grill preheated to high heat. Close lid and cook 25 min., brushing meat loaf with remaining barbecue sauce about every 10 min., until a meat thermometer registers 160°F (71°C) and meatloaf turns golden around edges. Remove from grill; rest 10 min. before slicing.

  • Step 3

    Meanwhile, place kale in microwaveable bowl with 2 tbsp (30 mL) water. Microwave on HIGH until kale is softened, 2 to 3 min.; drain well.

  • Step 4

    In large bowl, whisk together olive oil, vinegar and salt. Add kale, corn and cheese; toss to combine. Serve with sliced meat loaf.
